ALDEHYDE BENZALDEHYDE
BENZYL ALDEHYDE
concentrated benzyl aldehyde (almond)
XPP2083
Fragrance family: fruity

Smell: almond
XPP2083
One of the most recognizable aldehydes with the smell of almonds, i.e. benzaldehyde
Benzaldehyde was first extracted in 1803 by the French pharmacist Martrès. His experiments focused on explaining the nature of amygdalin, the poisonous substance found in bitter almonds, the fruit of Prunus dulcis. Then Pierre Robiquet and Antoine Boutron-Charlard, two French chemists, produced the currently used benzaldehyde. In 1832, Friedrich Wöhler and Justus von Liebig were the first to synthesize benzaldehyde.
In industrial settings, benzaldehyde is mainly used as a precursor to other organic compounds, ranging from cosmetics, perfumery, pharmaceutical foodstuffs, to plastic additives.
When used in food, cosmetics, pharmaceuticals, and soap, benzaldehyde is "Generally Regarded Safe" (GRAS) by the US FDA and FEMA. This status was confirmed after a 2005 review. It is accepted in the European Union as a flavoring. Toxicological studies indicate that it is safe and not carcinogenic at concentrations used in food and cosmetics, and may even have carcinostatic (anti-cancer) properties.

Aldehydes are found primarily in flower, fruit and citrus compositions. This is due to the structure of their molecules - they contain long chains of carbon atoms connected with an aldehyde group, which form compounds with very pleasant aromas, with fruit or floral aromas.
