Turmeric is a popular spice derived from turmeric root. It is widely used in Asian cuisine. Curry is the main ingredient in the spice mixture known as curry. It has a warm, bitter taste and is often used to flavor or color curry powder, mustard, butter and cheeses. But turmeric root is also widely used in medicine. It contains a yellow chemical called curcumin, which is often used to color food and cosmetics.

Turmeric is commonly used for conditions that involve pain and inflammation, such as osteoarthritis. It is also used for hay fever, depression, high cholesterol, a type of liver disease, and itching.

Turmeric oil contains very large amounts of curcumin.
Turmeric contains essential oils (max 5%) containing various sesquiterpenes, many of which are unique to this plant. The most important aromatic compounds are turmerone (max 30%), ar-turmerone (25%) and zingiberen (25%). Conjugated diarylheptanoids (1,7-diaryl-hepta-1,6-diene-3,5-dione, e.g. curcumin) are responsible for the orange color and possibly also for the tart taste (3-4%). Curcumin makes up 0.3-5.4% of pure turmeric.
