Eugenol - an organic chemical compound from the group of terpenes. It is a 4-allyl derivative of guaiacol. By oxidizing eugenol, vanillin can be obtained, which is one of the basic methods of its production in industry.

Eugenol is a fragrance that is the basic component of clove oil (72–90%). It is also found in cinnamon. It is a colorless, oily liquid with a pleasant pungent smell reminiscent of cloves.

Aldehydes are found primarily in flower, fruit and citrus compositions. This is due to the structure of their molecules - they contain long chains of carbon atoms connected with an aldehyde group, which form compounds with very pleasant aromas, with fruit or floral aromas.
